5 Healthy Soup Recipes For This Winter

1. Lemon and coriander soup

What all you need?

-2 teaspoon (tsp) oil
-1 tablespoon (tbsp.) lemon juice
-2 tsp each of finely chopped garlic and green chillies
-¼ cup each of finely chopped onions, cabbage, carrots, and coriander
-2 tsp cornflour dissolved in 2 tbsp water
-3 cups vegetable stock
-Salt to taste

How to make it?

-Heat the oil in a deep pan.
-Add garlic and green chillies and saute for a few seconds on a medium flame.
-Then, add onions and saute for 1-2 minutes, followed by cabbage and carrots which must be sauted for another 1 minute.
-Add the vegetable stock, lemon juice, and salt.
-Next, add cornflour-water mixture to it.
-Cook for 2-3 minutes and stir occasionally.
-Add coriander, mix well and serve hot.

2. Stir-fry soup

What all you need?

-3 whole dry Kashmiri red chillies (broken into pieces)
-4 roughly chopped garlic cloves
-½ cup each of thinly sliced spring onion whites, red capsicum, and shredded cabbage
-1 tsp oil
-2 tsp lemon juice
-½ tsp sugar
-Salt to taste
-1 tbsp finely chopped spring onion greens for garnishing

How to make it?

-Start by soaking the red chillies in ½ cup of hot water for 20 minutes.
-Drain the water leaving behind only 1 tbsp in it.
-Add red chillies and garlic in a mixer and blend to form a smooth paste.
-Take a deep pan and heat the oil in it.
-Add the chilli-garlic paste and saute for some seconds on a medium flame.
-Add spring onion whites, cabbage, and red capsicum and saute for 1-2 minutes.
-Then, add lemon juice, salt, and sugar.
-Add 3½ cups of hot water, mix well and let it boil.
-Simmer for 3-4 minutes, while stirring occasionally.
-Garnish with spring onion greens and its ready to serve.

3. Masoor dal and paneer soup

What all you need?

-¼ cup each of masoor dal and low-fat paneer (cottage cheese) cubes
-½ tsp crushed garlic
-½ cup sliced onions
-¾ cup chopped tomatoes
-¼ tsp chilli powder
-1 tsp oil
-2 tsp lemon juice
-Salt to taste

How to make it?

Heat the oil in a pressure cooker on a medium flame.
-Add onions and saute for 1-2 minutes.
-Add garlic and chilli powder and saute again for a few seconds.
-Then, add masoor dal, tomatoes and 2½ cups of water.
-Mix well and pressure cook for 3 whistles.
-Let it cool slightly and blend to a smooth puree.
-Transfer this to a deep pan, add salt and mix well.
-Allow it to boil for 2 minutes, add lemon juice and paneer.
-Mix gently and serve.

4. Egg drop soup

What all you need?

-4 cups chicken stock
-2 tbsp cornstarch
-1 tsp ground ginger
-¼ tsp garlic powder
-2 large eggs
-2 egg whites
-¼ cup thinly sliced green onions (little extra for garnishing)
-¼ cup corns
-½ tsp toasted sesame oil
-Salt and black pepper to taste

How to make it?

-Take a saucepan, whisk together chicken stock, cornstarch, ginger, and garlic powder, without any lumps.
-Heat over high flame till it boils, and stir occasionally.
-Simultaneously, whisk the eggs and egg whites together in a small bowl.
-Remove the chicken stock from heat, once it boils.
-Stir the broth in a circular manner with a fork or whisk it.
-Then, gently pour the whisked eggs into the soup to form egg ribbons.
-Stir this in the sesame oil, green onions, and corn until combined.
-Season it with salt and pepper.
-Top it with green onions and serve immediately.

5. Chicken clear soup

What all you need?

1 bay leaf
-2 cinnamon sticks
-2 cardamoms
-3 cloves
-3 green chillies
-1 onion and carrot each
-½ cup cabbage
-150 grams chicken bones
-100 gm boneless chicken pieces
-½ cup coriander
-2 tsp lemon juice
-1 tsp each of peppercorns, coriander seeds, and garlic
-½ tsp ginger
-Salt to taste

How to make it?

-Add bay leaf, cardamom, cinnamon, cloves, coriander seeds, peppercorns, garlic, ginger, green chillies, onions, cabbage, carrot, chicken bones, along with salt and water in a pressure cooker.
-Cook for 5 whistles.
-Remove chicken bones and strain the water.
-Keep this on a flame, add few boneless chicken pieces and boil for 5-10 minutes.
-Add coriander and lemon juice.
-Serve hot.
