White arrowroot also known as ‘Bilathykoova” belongs to the family Marantaceae. It is cultivated for starch which is obtained from its rhizomes (rootstock )and is used as a nutritious food and in medicines. Arrowroot powder also called’ koovapodi’ in India, is a digestible starch extracted from the rootstock of the ‘Maranta Arundinacea’ plant. This plant is native to South America. In India, the arrowroot plant is mostly grown and cultivated in the hilly regions of Kerala. For Caribbean Arawak people this plant is a staple food, which is known for its medicinal properties. Tubers of the arrowroot plant are the source of arrowroot powder. After being soaked in hot water, they are peeled to remove their fibrous covering for preventing the bitter taste and discolouration of the final product. These are then cut into small pieces and grated into coarse pulp. The pulp is then washed on screens for separating the starch from the fibrous material. The starch which is settled is then filtered to further separate it from fibres. The separated starch is quickly dried and ground to powder. Arrowroot starch is one of the purest natural carbohydrates, with high viscosity. The root contains about 20% starch.
