Combine 2 tbsp cumin, 2 tbsp coriander, 1 tbsp black pepper, 1 tbsp cloves, 1–2 cinnamon sticks, 4–5 green cardamoms, 1 black cardamom, and grated nutmeg. Dry roast, grind into a fine powder, and store in an airtight jar.
